Folk gingerbread men are my favourite gingerbread cookies because they have the best balance of flavours, soft texture and quality ingredients. AND there is a rare chocolate-flavoured variety as well!


My go-to gluten free flour blend for these scrumptious gingerbread cookies (and lots of other recipes) is Better Batter. It's ready to go out of the bag, already containing xanthan gum, and always gives me the best little cookies.


If you're going for a basic, traditional look, you don't need anything more than royal icing. If you'd like a splash of color, set up a few icing bags or bottles, and then give your gluten free gingerbread cookies cute clothing, big grins, and tons of accessories.


If you'll be baking your gingerbread men around the holiday season, it makes sense that you might be pressed for time. Well, you're in luck: You can totally put together this gluten free gingerbread cookie mix ahead of time.


It can be difficult to tweak cookie recipes because they tend to rely so much on each of their individual ingredients, but I do have some substitutions below for gluten free gingerbread men that are dairy free, egg free, and more that should work out just fine.


The most common reason your gluten free gingerbread men dough might be too crumbly is that you've used too much flour. This often happens when you scoop the flour out of the bag and use volume measurements rather than weight (scooped flour can get compacted, giving you more than you actually need).


You can also try judging when gingerbread men are ready to come out when they're set in the center (not wet or glistening at all). Take them out at that point and give them plenty of time to cool so they retain their shape.


A tip that comes from years of creating with gingerbread. Turn your cookie sheet upside down and roll the dough out on that side. Yes, I mean the bottom of the cookie sheet. There are no sides to get in the way. Cut out the cookies and remove the unwanted dough. Bake in this position. Works every time. I have never found that gingerbread expands so much that it spreads into the neighbouring pieces.


My son being dairy free has absolutely loved the organix products! From first weaning to toddler! We love the gingerbread biscuits as a little afternoon treat! Mini or large they are the perfect snack without all the nasties.


The directions are simple: preheat oven to 375 degrees, combine cookie mix, butter and egg in a bowl and stir until combined. Use cooking oil to coat skillet, spread the cookie mixture evenly in skillet then bake in oven 12 - 14 minutes, remove from oven and let cool. Serve as is or get creative and decorate your gingerbread man cookie with icing and candies. Or top if off with you favorite ice cream and toppings. Enjoy!


I followed a trail of crumbs (okay, just a helpful librarian) to "The Gingerbread Book." According to sugarcraft scholar Steven Stellingwerf (I want his job!), gingerbread may have been introduced to Western Europe by 11th-century crusaders returning from the eastern Mediterranean. Its precise origin is murky, although it is clear that ginger itself originates in Asia.


These days, gingerbread generally refers to one of two desserts. It can be a dense, ginger-spiced cookie flavored with molasses or honey and cut into fanciful shapes (such as the popular gingerbread man). Or, particularly in the United States, it can describe a dark, moist cake flavored with molasses, ginger and other spices.


Of course, when gingerbread cookies are shaped like everything from popular politicians to baby animals, polite consumption can be tricky. Is it barbaric to bite off the head first? Or worse to start by amputating an extremity? If you nibble on decorations first, does the plaintive voice of that character from Shrek echo in your imagination ("Not my gumdrop buttons!") ?


In a bowl add softened butter and the brown sugar from the sachet. Beat until light and creamy. Add golden syrup and egg yolk and beat until combined. Add contents of pouch and mix to a dough. Turn onto a lightly floured surface and knead until dough is smooth. Roll out to 5mm thickness and cut out gingerbread men shapes. Place on a lined baking tray. Bake for 10-11 minutes until golden.

I made these gingerbread cookies in December and they were amazing. I have made many gingerbread cookies over the years and have not found a recipe as good as these. They are crisp which is how I prefer them and have a wonderful ginger taste. My grandkids also agreed that they were delicious. This recipe is a keeper!

I made this recipe with my small grandchildren and was delighted that it was so easy for them to work with. The gingerbread men came out perfectly and even my grandkids found them delicious. This will be a holiday tradition!


Tips: This mixture can be used for any shapes of gingerbread, including decorations for your Christmas tree, just make a hole for the ribbon before baking. Royal or glace icing can be used to decorate too.


Growing up, my mom, sister, and I would bake homemade gingerbread cookies every year for Christmas and every year they turned out different! Some were perfectly chewy, while others were a bit tough and dry. So for this recipe, I made it pretty much impossible to have any variation. These cookies bake perfectly thick and chewy every time.
